Picholine olives are cultivated in Gard, the region surrounding the antic city of Nîmes. These firm-fleshed olives are appreciated for their delicate, fruity taste. Unlike other black olives, black Picholine olives are picked when still green, then ripened after harvest. Brunel, founded by Eugène Brunel in 1912, has become a reference when it comes to olives and pickles. The company, based near Nîmes, is still owned and managed by the Brunel family.
